After having her second son, Daisy decided she wanted to get back into shape in order to keep up with her two young kids. Her first step was to increase her cardio by taking up kickboxing! However, she doesn’t let her health goals get in the way of her love of baking – she still finds time to whip up some sweet treats in her free time.

What prompted you to begin this health and fitness journey?

After I had my second son, I wanted to get healthier to keep up with the needs of my now two boys (ages 6 and 3 years old) and show them a healthy lifestyle. So, in March of 2018 I decided to make some changes and began my health journey.

What are your health goals?

Before I had my kids, I used to run. So, now my goal is to get back into running. I love cardio workouts and I’ve taken up kickboxing, which is a way for me to get a full body work out – and I feel great afterward. I also go walking in the evenings with the family.

How have you adjusted your eating habits?

As far as eating, I began a low-carb lifestyle. I started out on the Keto diet, which gave me the boost I needed to continue my journey. I prep all my meals usually three days in advance so that I have no excuse to buy fast food. My ultimate favorite food is Chocolate Chia Puddings. My favorite treats are desserts – especially cheesecake!

What hurdles did you face and how did you overcome them?

A lot of changes came into place due to the pandemic. That is when I started taking evening walks with my kids. I also wrestle with them as a way to participate in my son’s Jiu Jitsu classes.

What is something you know now, but wish you knew at the beginning of this journey?

Don’t cheat on your Keto diet, or you have to restart ketosis after all the hard work put into it!

What do you do to relax?

I bake. I bake. I bake. When my schedule allows, I use time in the evenings to create small desserts like custom cake pops. It brings me to focus and allows my creativity to flow.
